Red Wine Braised Short Ribs

Red Wine Braised Short Ribs! Slow cooked short ribs braised in red wine in the oven. My house smelt divine while cooking this one! This dish makes the perfect date night dinner in! Wintery ingredients make this one skillet dish exceptional for the winter. Serve over risotto in a bowl and cuddle up on the couch!

Ingredients
  

  • 4 lbs bone in, beef short ribs
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 5 cloves garlic, chopped
  • 2 cups dry red wine, such as Cabernet Sauvignon
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 5 sprigs fresh thyme
  • Salt & Pepper

Instructions
 

  • Preheat oven to 325 degrees.
  • Season short ribs with salt and pepper. Heat olive oil in a large oven proof skillet, sear ribs on all sides until brown and a crispy layer has formed. Remove ribs from skillet once finished.
  • Add onions, garlic and carrots to the skillet. Cook for about 10 minutes or until onions begin to brown. Add the short ribs back to the skillet. Add red wine, beef broth, tomato paste and thyme. Let simmer for a few minutes, then put skillet in the oven and cook for 2 1/2 to 3 hours. Short ribs should be falling off the bones.
  • Remove thyme and serve short ribs and carrots over risotto.
