- 5 medium stalks of kale
- 2 tablespoons olive oil
- 2 tablespoons nutritional yeast
- ¼ teaspoon cayenne pepper
- ¼ teaspoon red pepper flakes
- Pinch of garlic powder
- Pinch of salt and pepper
- Lemon Tahini Dressing:
- 2 tablespoons of tahini
- Juice of 1 lemon
- Pinch of cayenne pepper
- Pinch of salt and pepper
- Preheat the oven to 300 degrees.
- Remove the leaves from the stalks and break into small pieces. Wash and completely dry the kale leaves.
- Place in a large bowl and drizzle with olive oil. Massage leaves until well coated.
- Sprinkle on nutritional yeast, cayenne pepper, red pepper flakes, garlic powder and a pinch of salt and pepper.
- Massage until seasonings are well distributed.
- In a single layer, transfer to a baking sheet lined with parchment paper.
- Bake for 8-11 minutes until crispy.
- To make the lemon tahini dressing, whisk all ingredients together in a small bowl.
- Once the kale is finished, let cool for a few minutes. The serve immediately with dressing.
