Slice peppers in half long ways, clean by removing seeds.
Place on a baking sheet and drizzle with one tablespoon of olive oil and a pinch of salt and pepper. Bake for 15 minutes.
While the peppers are cooking, combine cooked orzo, jalapeno, avocado, black beans, red onion, feta cheese, parsley or cilantro and olive oil in a bowl. Season with salt and pepper to taste.
Once peppers are done, fill each pepper with orzo mixture.
Bake for another 8 minutes to warm stuffing.
Serve warm with a dollop of greek yogurt and enjoy!
