Belgian Waffles with Bourbon Maple Syrup

- For the Waffles:
- 2 cups whole wheat flour
- 1½ cup almond milk
- ¼ cup coconut oil, melted
- 2 tablespoons cane sugar
- 2½ teaspoons baking powder
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- For the Syrup:
- 1 cup pure maple syrup
- 1 tablespoon of bourbon
- ⅛-1/4 cup pecans, toasted
- Preheat your waffle iron according to the manufactures instructions.
- In a large bowl, whisk together all dry ingredients.
- In a small bowl, whisk together coconut oil, almond milk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spray waffle iron with a little bit of cooking spray and scoop in the batter.
- In a small pot, add maple syrup and bourbon. Let simmer for a few minutes to burn off the alcohol.
- Toast pecans in a small skillet for a minute or two.
- Serve waffles immediately with syrup and fresh fruit.
