Coconut Almond Granola

Ingredients
  • 3 cups quick oats
  • 1 cup raw almonds, chopped
  • ⅓ cup honey
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoon coconut oil, melted
  • 3 tablespoons coconut flakes
Instructions
  1. Preheat the oven to 350 degrees. Mix the oats and almonds together in a glass dish, I use a glass pie dish. Toast oats and almond mixture for 15 minutes, occasionally stirring to toast all the oats.
  2. Mix the honey, cinnamon, vanilla extract and coconut oil together. Once the oats are finished toasting, mix in the honey mixture, evenly coating everything.
  3. Pour an even layer onto a baking sheet lined with parchment or wax paper. Place the baking sheet in the oven and turn the oven off. Let it sit in the oven for at least 20 minutes. This will allow the oat mixture to fully finish cooking.
  4. Remove from the oven and let it cool completely. Break apart the granola clusters. Mix in coconut flakes or any other desired topping. Store in an airtight jar.
