Spicy Kale Chips

It’s known that I love kale!!! I love it so much that I’ll eat it any way and any how! In fact, I swallowed every one of these kale chips once I was done photographing them! haha!

These spicy kale chips are great. The lemon tahini dressing calms the spiciness a bit with its nutty flavor. These make a great appetizer or even an afternoon snack.

Spicy Kale Chips

Ingredients:
5 medium stalks of kale
2 tablespoons olive oil
2 tablespoons nutritional yeast
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
Pinch of garlic powder
Pinch of salt and pepper
Lemon Tahini Dressing:
2 tablespoons of tahini
Juice of 1 lemon
Pinch of cayenne pepper
Pinch of salt and pepper

Spicy Kale Chips

Preheat the oven to 300 degrees. Remove the leaves from the stalks and break into small pieces. Wash and completely dry the kale leaves. Place in a large bowl and drizzle with olive oil. Massage leaves until well coated. Sprinkle on nutritional yeast, cayenne pepper, red pepper flakes, garlic powder and a pinch of salt and pepper. Massage until seasonings are well distributed.
In a single layer, transfer to a baking sheet lined with parchment paper. Bake for 8-11 minutes until crispy. To make the lemon tahini dressing, whisk all ingredients together in a small bowl. Once the kale is finished, let cool for a few minutes. Then serve immediately with dressing.
