Shredded Carrot & Cucumber Salad

I love shredded vegetables! So, when I thought of shredding carrots, I thought to shred some cucumbers and make this beautiful bright Shredded Carrot & Cucumber Salad for summer! Lemon and orange dressing…perfect for these warm summer days. It gives the veggies a nice crisp and refreshing taste. Parsley keeps it light and fresh!

Shredded Carrot & Cucumber Salad

Start by shredding the carrots, then the cucumbers. Cucumbers are a bit tough compared to the carrots. Once you get to the middle, where all the juicy stuff is, it gets harder to shred. But all that cucumber juice is perfect for the salad.

Shredded Carrot & Cucumber Salad

Toss the shredded veggies in a bit of olive oil. Add the juice of the lemon and orange. Mix around to evenly coat. Season with salt and pepper. Divide the salad between two plates, sprinkle on feta or cheese of choice. Sprinkle parsley and red pepper flakes. Then…enjoy!

Shredded Carrot & Cucumber Salad
Ingredients
  • 5 medium carrots
  • 1 seedless cucumber
  • Juice of 1 lemon
  • Juice of ½ orange
  • 1-2 tablespoons olive oil
  • ¼ cup feta
  • ¼ red onion
  • Salt and pepper to taste
  • 1 tablespoon parsley, chopped
  • Red pepper flakes (optional)
Instructions
  1. Clean and shred carrots and cucumbers, place in a large bowl.
  2. Add 1-2 tablespoons of olive oil, juice of lemon and orange. Mix until well combined. Season with salt and pepper. Slice red onion thin. Add to salad and toss.
  3. Divide between two bowls or plates. Sprinkle with feta, parsley and red pepper flakes.
