Coconut Almond Granola

Granola is heavenly! It makes as a great topping; on almost anything! But I love it on smoothie bowls. Granola can also be great on oatmeal, yogurt, baked fruits, in salads, even on desserts. Smoothie bowls are one of my favorites though. That crunchiness is just what you crave when having a smoothie.

Granola can be so easy to make, it even makes the kitchen smell heavenly. First you toast the oats. Then you add a few ingredients to make them crunchy. How easy was that?

I added coconut flakes to mine, but get creative and add anything you like. Dried fruits and cocoa nibs are some of my favorites. You can also add different nuts, chocolate chips or even flax seed. Serve granola anyway you would like. You can even snack on it throughout the day. Store in an air tight jar to keep freshness.

Ingredients
  • 3 cups quick oats
  • 1 cup raw almonds, chopped
  • ⅓ cup honey
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoon coconut oil, melted
  • 3 tablespoons coconut flakes
Instructions
  1. Preheat the oven to 350 degrees. Mix the oats and almonds together in a glass dish, I use a glass pie dish. Toast oats and almond mixture for 15 minutes, occasionally stirring to toast all the oats.
  2. Mix the honey, cinnamon, vanilla extract and coconut oil together. Once the oats are finished toasting, mix in the honey mixture, evenly coating everything.
  3. Pour an even layer onto a baking sheet lined with parchment or wax paper. Place the baking sheet in the oven and turn the oven off. Let it sit in the oven for at least 20 minutes. This will allow the oat mixture to fully finish cooking.
  4. Remove from the oven and let it cool completely. Break apart the granola clusters. Mix in coconut flakes or any other desired topping. Store in an airtight jar.
